Snow Cream

Here's a real treat to enjoy with each snowfall!  Now, this is by no means healthy, but it's a real wintertime treat.  Cross the ice cream off the grocery list and make this instead.  If you're doing this during a heavy snowfall you can collect the snow while it falls in a shallow pan (9 x 13 size) while you put the rest of the recipe together or you can simply go out and fill a bowl after you've put the recipe together and chilled it.  You'll need a fairly good mixing bowl/pan full of snow.

Ingredients:
1 can evaporated milk
3 eggs
1 capful of vanilla extract
1 pinch of salt
1 1/2 cups of sugar

Mix all of the above in a pot, bring to a slight boil and then refrigerate the mix until it's cold.  Add enough snow to make a thick but creamy ice cream (texture will be similar to soft serve) and serve.  If you're lucky enough to have some left, cover it up and freeze it for a treat later in the week.  Enjoy!

Exciting recipe for my three-year-old, who is constantly eating snow -- I'm so glad I found it this AM, as the snow is really coming down in Hanover!
